3 Healthy Vegan Lunches/Dinners!

Hey loves! So we've decided to start making some blog posts! Here are three of our favorite dishes. They are simple, filling, healthy, delicious, and most importantly EASY! :)

Asian-inspired meal

Ingredients:

Brown/white rice

No salt added canned beans

Frozen mango

Frozen peppers

Lemon

Fresh basil

We use an Instant Pot to cook our rice. Pour 5 cups of rice and 10 cups water into the pot. If you are cooking brown rice, cook it for 25 minutes. If you are cooking white rice, cook for 10 minutes. Microwave the frozen mango and peppers until they are hot. Mix remaining ingredients and DONE! Add additional spices for more flavor! You can even add seaweed to really give the dish an Asian flavor.

Indian-inspired meal

Ingredients:

White Basmati rice

Lentils

Frozen peas and corn

Lemon

Curry spices

Nutritional Yeast

Use the Instant Pot to cook the rice. Pour 5 cups of rice and 10 cups of water. Cook for 10 minutes.  Use a separate Instant Pot (or wait for the rice to be cooked,) and cook up the lentils. To cook lentils, pour 4 cups of them into the pot and add 10 cups of water. Cook them for 20 minutes. Microwave the peas and corn and mix everything together. The curry, nutritional yeast, and lemon make an amazing combo! If you want to get more fancy, feel free to add fresh minced garlic and chives to the dish. If you're on the go, put the dish in a wrap/burrito!

Purple/Asian Sweet Potatoes

Potatoes are one of our favorite foods! Not only do they contain many vitamins, they are also delicious and satisfying. There are many different types of potatoes, and one of our current favorites is the Asian sweet potato. To cook them, preheat oven to 430 degrees F, wash the potatoes, and then place them on a steel tray covered with a Sil-Pat. Stab the potatoes, pop them in the oven, and then bake them for 70 minutes. That simple! Make sure to let them cool down because they will be very hot! We like to add lemon and a little bit of salt for flavor. Add the sweet potatoes to a salad or just eat them on their own. We love sweet potatoes for breakfast lunch or dinner!

I love sweet potatoes! Thank you for sharing your easy meal ideas. Do you guys find that when you eat more fruit than starch your acne gets worse? I eat pretty similarly to you guys, but I eat probably eat a bit more fruit and less starch. Unfortunately, I'm still struggling with acne despite avoiding all overt fats and processed foods : ( Any ideas?
